Easy banana bread.
1/2 to 3/4 cups brown sugar (depending on how sweet you want it to be)
1/2 cup butter (softened)
2 large eggs
3 mashed ripe bananas (if super ripe, just add to recipe and mashing not needed).
1 teaspoon baking soda
1/4 teaspoon salt
2 cups flour
Optional:
1/2 cup pecans or walnuts
1/2 cup chocolate chips
Preheat oven to 350°F.
Lightly greease a 9" x 5" loaf pan.
Beat brown sugar and butter together in a bowl (a stand mixer works well).
Add eggs and bananas and mix until well blended.
Add baking soda, salt, flour, and mix until combined (start slowly to avoid spraying flour all over).
Add nuts and/or chocolate chips if desired and mix briefly.
Pour into greased loaf pan using a silicone spatula to get all the batter out.
Bake in preheated oven until a toothpick inserted comes out clean, about 60 minutes.
Let cool then turn out onto plate or wire rack to cool completely.
